We're Going Crazy For Cuisine!

We’re getting wild this Wednesday and sharing two recipes that are easy to make and will help fuel your body in all the right ways.

Laura Babcock (@LauraBabcock), President of Powergroup Communications, was nice enough to share her delicious lunch with us! Her recipe is revamped from the Power Foods Cook Book and gets an A+ in our books.

Meat Free, Wheat Free Tofu Stir-fry

Serves: 1-2

Ingredients:

½ container tofu

1 tsp peanut oil

1 tsp sea salt

½ cup broccoli

½ cup cauliflower

1 sweet pepper

1 tbsp garlic

½ cup bean sprouts

1 tsp chili flakes

2 tsp apple cider vinegar

1 tsp peanut butter

2 tsp soya sauce

1 cup shiitake noodles 

Directions:

1.       Cut your tofu into cubes and pat dry.

2.       Heat a bit of peanut oil in your skillet.

3.       Brown the tofu for about 15 minutes until golden brown, flipping occasionally.

4.       Add a bit of sea salt and remove your cubes.

5.       Chop of your vegetables (broccoli, cauliflower, sweet peppers, garlic) and add them to your skillet.

6.       Add bean sprouts and chili flakes to your skillet, cover and cook.

7.       In a bowl, mix your apple cider vinegar, peanut butter, and soya sauce. Mix vigorously until the sauce is smooth.

8.       Add your tofu and almost all of your sauce to your vegetables.

9.       Rinse your shiitake noodles and pat dry.

10.   Put the remaining sauce in your skillet along with your shiitake noodles.

11.   Once everything is heated, remove and serve hot!

Gluten-free Oat Flour Wrap

Serves: 1

 Ingredients:

1/3 cup gluten free oats

1 tsp psyllium husk

2 egg whites (1/4 cup)

1/4 cup water (more if you want a thinner consistency)

1/2 tsp baking powder (optional)

Directions:

1.       Blend your oats into flour.

2.       Preheat a greased pan to medium heat.

3.       Mix all of your ingredients into a bowl and add your favourite spices (Chelsea added garlic powder, dried parsley, chili, and basil).

4.       Pour your batter on a pan and smooth it out to the thickness and size you would like.

5.       Cook like a pancake.

6.       Once it’s done, let it cool for a few minutes then add your toppings.
